This recipe can be made with or without the bacon.
3 strip of bacon, diced ( optional)** 3 cups (Alsum sweet corn) fresh or Alsum Frozen Sweet Corn kernels 1/4 cup diced red bell pepper 1/4 cup diced onion salt and pepper to taste
**If not using bacon, just add small amount of vegetable oil in pan to saute' corn.
Slowly fry baon until crisp. Remove from pan and set aside. Add red pepper and onion to bacon drippings and saute' for 1 minute. Reduce heat to low and add corn. Cover and cook for 5 more minutes, or until corn is tender. Add salt and pepper and serve immediately. Makes 6 servings
