6-8 ears of Alsum's fresh sweet corn OR use 1 bag of Alsum FROZEN sweet corn, drain juice and add to dressing 1/4 diced red onion 1/2 diced red bell pepper 1 diced avocado 1/2 cup sliced cherry tomatoes
For the Dressing: 4 TBSP olive oil 1 tsp sugar 1 tsp dijon mustard 1 clove garlic - minced salt and pepper to taste juice from 1 lime Optional: chopped parsley
Whisk dressing ingredients together. Set aside. Cut sweet corn off the cob. Add to a separate bowl. Add remaining ingredients. Drizzle with desired amount of dressing. Toss until coated.
